Do you need an infallible recipe to help you incorporate shiitake's into your standard weeknight dishes? This recipe is a fantastic way to prepare your shiitake mushrooms by themselves as a side, or as a protein for your main dishes like pasta! My family loves eating these oven roasted shiitake mushrooms with a generous helping of alfredo or as a side with a nice cut of steak! I found this recipe on page 449 in "Growing Gourmet & Medicinal Mushrooms: 3rd Edition" by Paul Staments:
Paul and Dusty's Killer Shiitake Recipe
-1 tablespoon olive oil
-2 tablespoons sesame oil
-1 tablespoon tamari or soy sauce
-2 or 3 tablespoons white wine
-pinch of black pepper
-1 or 2 cloves of crushed garlic
-1 pound whole, fresh shiitake mushrooms
Mix the oils, tamari, wine, and spices in a small bowl. Stir vigorously as the ingredients tend to separate. Set Aside.
Cut the mushroom stems from the caps. Place gills facing up. Do not slice the mushrooms! (The stems can be dried and used for a soup stock or discarded.) Baste the sauce onto the gills of the mushrooms, making sure the gills become saturated with the sauce.
In a 350 degree Fahrenheit oven, bake the mushrooms uncovered for 30-40 minutes. You can also barbeque them over an open grill-- the smoky flavor makes it even better. Serve hot with seafood, rice, pasta, or whatever!
